Much in the same way that nothing offered in American "Outback" restaurants even vaguely resembles Australian food. For example, the dessert menu (even in their two Australian restaurants, now there's a daft move) includes pecan brownie and New York cheesecake as well as a cinnamon, apple and pecan ice cream thing. When everyone knows that Australians eat pavlova for pudding!

I think the term "Italian dressing" was probably invented years ago to market vinaigrette. "Italian" implying it was of European origin and therefore desirable to Americans, who are frequently thought to have the palates of some kind of lumbering food-sucking draft animal. In the same way, we are supposed to believe that canned ravioli is Italian--or even edible.

Lumbering food-sucking draft animal?? Yoink.
"Canned ravioli" is a frightening oxymoron.

Hilariously correct Pro. Last time I went to Italy I took a bottle of Italian dressing to teach my friends what real Italian cuisine was all about. Alessio now has the bottle mounted on the kitchen like a kind of trophy!

(But every American knows that Australians are just like Southerners, only with funnier accents and a penchant for large knives.)
