"Well-braised eyeball on toast". Well-praised by many I assume? In Mexico I dined with a family that had steamed an 18kg cow head for hours and hours - traditional meal for some festival I can't remember. As guest, I was given 1/2 of one of the eyes. I recall that the taste of the melanin-rich delicacy reminded me of the smell of my grandfather's milking shed - and being in the country just 2 months, enjoyed the eye, and the curious if unexpected olfactory reminder of home and family. The brains, cooling in their own fat didn't do anything for me other than constrict my "gorget". No amount of tortilla could help me get past the cold greasy brains as the meal wore on....

one would do well to pass the cold greasy brains (which I'm going to steal, thank you kindly). word is, brains are inhabited by bacteria that don't die in the cooking process (though 18 hours--who knows?)
myself, I never had an eye I didn't like.
