` i hope that the ignorance around the term "fond" comes from the writer, not the restaurant itself. fond means stock, the bits in the pan are called sucs.

Culinary term for the "brown bits", glaze and fats left in a pan in which meat has been roasted or pan-fried. Upon pouring off the excess fats and deglazing the pan with a little wine, water or stock, the resulting mixture which forms the basis for sauces or gravies is called fond - "foundation".
